Costa Coffee is working hard with all of its partners to meet the 2012 salt targets.We are looking at each product within the Costa bespoke range to ascertain where we can make savings on salt without compromising on taste and quality.We met the 2010 targets by the 1st January 2010 but are facing some technical challenges achieving the more stringent 15% reduction for 2012. We are at this moment faced with some technical issues on products with high salt ingredients such as ham and cheese, where we use high quality ham and locally sourced cheeses and on pastries where it is a brand standard to use all butter pastries.We have already switched to unsalted butter across all our pastries.Overall using the sales weighted averages we are still tracking to be able to achieve the target by 31st December 2012. On some categories we are on track to meet the targets against sales weighted averages with some cases sitting below the levels required.We are working within the wider Whitbread Group with the British Hospitality Association to understand how the catering pledge will be used and with manufacturers of core ingredients within our range to understand how they can help us achieve the targets.
