The Defence Catering Group's Operations Business Unit is made up of four teams: Operations and Commitments, Food Supply Management, Food Quality Assurance and the Food Supply contracts Teams.

Operations and Commitments Team is the focus for current operations, sustainability policy and the management of the storage and distribution of Operational Ration Packs (ORP). It is also responsible for operational requirements, policy and arranging food supply to military operations.

The Food Supply Management Team oversees the procurement and distribution of food to the armed forces through the MoD's food supply contractor 3663. Additionally, they manage the R&D, production and quality of constituent elements of various types of operational ration packs (ORP) provided by DCG to ensure that ORP is fit for purpose. Food Selection Panels are held regularly at Service units to ensure that food provided by the contractor complies with the Armed Services Food specifications and provides value for money.

The Food Quality Assurance Team ensures that the quality of food supplied under contract meets the standards required to feed the armed forces wherever they operate. Approval inspections of food premises, the monitoring of manufacturing processes and the assessment of the effectiveness of the quality management systems used by suppliers, particularly in the production of ORP and its components, are key areas of their work. The team also provides technical advice and guidance to armed forces personnel involved in the food supply chain.

The Food Supply Contracts Team places and subsequently administers contracts for food supply including ORP componentry. The current Armed Forces Food Supply contract placed with '3663' will time expire on 30.09.06 and will then be replaced by a new contract currently being competed.
